Since 2003, in the city of San Francisco, bottled water served in restaurants is being phased out in favour of tap water. The establishment « Chez Panisse », a pioneer in durability, used to sell more than 25 000 bottles a year; through this it made 100 000 dollars. The filtered and carbonated water which is served now comes from the tap. It is less expensive and more eco-friendly as it does not need any packaging or to be transported over long distances. The local authorities of San Francisco and Paris sought inspiration from this measure by forbidding their services from buying bottled water.
